| FERMENTATION |
after the soft pressing selected yeasts are added, therefore fermentation and the alcoholic maceration are brought to a temperature of 23°C for 12/14 days. The following malolactic maceration is made in steel by adding seclected bacterias , afterwards the wine is submitted to a micro oxygenation for 2 months to gain a much milder taste from its tanic structure.After the maturation in steel for 4 months, it undergoes to tartaric stabilization ,filtered and bottled. |
